{Super Bowl Snacks}

With Super Bowl Sunday right around the corner, I thought I'd post a few snacks as a little inspiration for your party planning.  I posted these a couple of years ago, and now it's time to add to the list.  I think all of the yummy and simple apps below will be a hit at any Super Bowl Party!

{Snow Day + Crockpot Creamy Chicken and Noodles}

What a great week this has been!!  Yesterday we had the most perfect time celebrating our sweet girl's 1st birthday, and today we woke up to snow!!  Well, maybe it's a bit more ice than snow, but we still had a blast playing outside with Kate.

I just love a good snow day, and this one is starting off pretty great.  Right now my baby is fast asleep, my husband and I are cuddled up by the fire, and I just got my creamy chicken and noodles started in the crockpot.  Ahhhhhhh pure bliss!!

This is my Mom's delicious crockpot recipe, and it has quickly become one of our favorites.  It is perfect for cold winter days like this, and if you hurry, you can whip up a pot right now to serve for dinner tonight. :)  Check out how simple it is…


2 cans of cream of chicken soup

4 cans of chicken broth

1 stick of sliced butter (or less if you prefer)

4 boneless chicken breasts (or more depending on the size of your crockpot)

Wide egg noodles (as many as you desire)

1 bag of frozen peas and carrots


Mix cream of chicken soup, butter, and chicken broth in crockpot.  Add chicken breasts and cook on low for 8 hours.  Shred chicken and add wide noodles and vegetables for the last hour, and cook until done.  Enjoy!!

I don’t even know where to begin today…This is such a big
day for our family because our beautiful baby girl turns ONE today!!  Saying that still feels crazy to me because
it literally feels like just yesterday that we were in the delivery room
welcoming our girl into the world.

I remember every, single detail about every, single second
of that amazing day, and thinking about it is truly overpowering for me.  The memories make me so emotional because I
can’t even put into words the powerful, explosive, overwhelming, heart-bursting,
warm, unconditional love that I feel for my little Kate.  Every time I think about her or even look
into her beautiful eyes, my heart seriously feels like it could burst right out
of my chest.

As I type this, I’m taken back to that first moment that I
held my baby girl…Our doctor put her directly into my arms, and she looked
right into my eyes.  As I looked at her
through tear-filled eyes with my husband right by my side, I knew that I was
already forever changed by my Kate.  In
that instant, I felt a love like no other…A love that was so incredibly special
and strong…It was a love that made my heart melt right then and there.

Not only did Kate’s birth make us the two happiest people in
the world, it also changed the way we live our lives.  I have felt this sense of contentment and
peace since our little girl was born, and she makes us want to live better
lives and be the best parents, role models, and mentors we can possibly be.  It’s not about us anymore…Now we live our
lives in a way that will make our daughter proud, and that means so much to us
that she has brought out such positivity in all of our lives.

Over the past year, I am so happy with the way Kate has helped
me live.  I have never felt closer to God
than I do now, and I pray every single day. I pray for my daughter, I pray for my family, but most of all, I just
find comfort in prayer, and it feels so powerful to me since Kate was
born.  It’s almost like I can feel Him
when I’m talking to Him, and I love knowing that He chose Kate for us.  It is such an honor to be her Mother, and I am forever grateful to Him for giving us the most wonderful angel on earth.

So today, we celebrate Kate…The greatest thing that has ever
happened to us, and we vow to make each year better than the last and to be the best parents we can be to her.  We promise to protect her, squeeze her, comfort her, console her, inspire her,
respect her, cuddle her, honor her, but most of all, we promise to LOVE HER
with all of our hearts every day of our lives.

To our sweet Kate…We thank you…We thank you for making us
your Mommy and Daddy…We thank you for making us the happiest parents on
earth…We thank you for making us live better lives, and we thank you for making
this last year the BEST year we have ever had!! Happy 1st Birthday, sweet angel!  WE LOVE YOU!!!

{Crockpot Cabbage and Sausage Meal}

I just love a good crockpot meal, and I get so excited when I find something that becomes a favorite in my house.  I'm always trying new things in my crockpot, and I have had some hits along with plenty of misses.  :)  Well, this cabbage meal was a hit, and it has worked it's way right into my weekly meal rotation.

My husband and I both LOVE cabbage and we also try to eat healthy, so this meal really fit the bill.  It's so simple, easy to prep, and it can be ready in just a few hours.  Hope you enjoy!!
  • 1 large head of cabbage (Quartered with stem removed)
  • 1 lb of smoked sausage (I use Turkey Polska Kielbasa to lighten it up a bit)
  • 1 stick of butter (I never use this because I try to make it healthy. I may add a heaping spoonful of Smart Balance just to taste.)
  • 1 large onion
  • Salt and Pepper
  • 1/4 cup of water

Slice onion, cabbage, and sausage.  Layer cabbage, sausage, onion, and butter in crockpot.  Repeat until you have used it all.  Salt and pepper to taste, and then add water.  Cook on high for 4 hours, stirring occasionally.  Enjoy!!

** I have also added chopped mushrooms and browned, ground turkey meat to this recipe, and that was delicious as well.  Feel free to experiment. :)

{Valentine's Day Ideas for Little Ones}

For some reason, I started thinking about Valentine's Day plans for our sweet girl as soon as I woke up this morning.  I know she's only a baby, but I still want every holiday to be as special and as magical as the last.

I just LOVE the planning and prep that goes into anything and everything for our little girl, so I thought I would go ahead and start brainstorming.  I want to have some little treats for her to enjoy, but I also want to do some Valentine's Day crafts with her so her Dad and I will have keepsakes to cherish forever.

{A Little Peek into our Anniversary Trip}

**January 16th and 17th will always be special dates for my husband and me…This past January 16th marked 10 years that we have been together, and the 17th was our 5-year wedding anniversary.  We celebrated in Punta Cana paradise, and here's a little glimpse into our trip...**

Forrest and I are back from celebrating our 5-year wedding anniversary, and everything was absolutely perfect!!  We couldn't have asked for a better trip…We swam with dolphins, snorkeled with sharks and sting rays, got kissed by sea lions, relaxed on the beach, but most importantly, we spent such special, quality time together…It was just us…No distractions, no obligations, no responsibilities…We feel so reconnected, rejuvenated, and rested, and we had so much fun reminiscing about our 5 and 10 year milestones.  It's a trip that will be cherished forever, and here's a little peek at some of our pictures...

{5 Year Anniversary}

Hey friends!!  I just wanted to pop in real quick to let you know I'll be offline for a few days.

This Friday, January 17th, marks five years of marriage to my amazing husband!!  What a special milestone this is for us, and I plan on spending every second with my hubby reminiscing about the moments and memories that have made the past five years so wonderful.

{Inspirational Mom: Christi Hucks and the One Year Wardrobe Resolution}

Great girlfriends are such wonderful gifts, and they bring so much joy and happiness into my life.  After finishing Graduate School at USC and moving to a new town, it didn't take long for me to meet some amazing women who I knew would have a special place in my life.  I immediately clicked with Christi, and she has become such a dear friend to me.  After giving birth to my little Kate, she has also become someone I can always turn to for good, supportive "mama advice."

Not only does Christi have a kind heart, good soul, and loving nature, she is also absolutely gorgeous with the most amazing style sense!!  Talk about a fab friend! :) As if those qualities aren't impressive enough, Christi has just embarked upon a journey that is truly inspiring.  She has vowed to refrain from buying any new clothes for an entire year on a mission to discover if less really is more, and you can read more about her One Year Wardrobe Resolution below.

For those of you who know her, you already know how downright wonderful she is…For those of you who don't know her, allow me to introduce you to Christi Hucks...

Christi Hucks lives in Conway, SC with her husband Robert and their two boys, Riles (5) and Winn (3). Christi graduated from the University South Carolina School of Law. However, she gave up practicing law to focus on her family. She is doing what she loves most in the world - being a stay-at-home mom and wife. 

Here is Christi's story behind her One Year Wardrobe Resolution Journey…

It all began the end of November 2013. I decided to "purge" my closet of the things I no longer wanted. I gathered 4 huge lawn and leaf trash bags worth of clothing - some of which still had tags. The worst part: I couldn't even tell I had taken anything out of my closet. It was sobering. I knew I had a problem. Online shopping and impulse buys at stores like Target (where clothes are "cheap") had control of my life. I had credit card debt and the anxiety that goes with it. I knew I had to make a change. I started praying to God for a resolution. What a lot of people don't realize is that, when you pray, it is not a one-sided conversation. You have to be quiet and listen. When you stop "talking" and start "listening" God will answer. Now I can't promise you will like what He has to say. Because I know I didn't! That quiet little voice said "You need to go an entire year, all 4 seasons, learning to appreciate what you have. Nothing new for 365 days." Nope. I didn't like this response. So I pushed it away. I thought to myself "There is NO WAY I could do that!!" I tried to give up online shopping for Lent last year and failed miserably! God knew this. Yet every day, the words came back. They started to get stronger and resonate with my soul. I decided that if I was going to do this, I was going to need a plan and a support team. God doesn't expect us to take on challenges alone. So, I called on some of my closest friends (who happen to be my size) and told them my plan. All of them had the same response: "You are crazy!! Why??" So this is what I told them: 1. I have way more than I could ever need. 2. I want to learn to be happy with the things I have. 3. I want to find out if "less" really is "more". 4. I want to prove to myself that I can do it. 5. There are more important things I should be spending my money on. I also told them I was fully aware I am going to have "withdrawals" and may even "relapse" over the course of this year. So, being the awesome friends they are, they all agreed to open their closets when I feel the need to "shop"! They agreed to let me borrow their best and send me their cast-offs. It takes a group of supportive friends and family to help with a resolution of this magnitude. This is more than a journey of shopping restrictions, it is a journey of self. It is proving to myself that the "things" of this world do not control me. It is finding the courage to take on a challenge that God has placed on my heart and knowing He will guide and support me the entire way. It is learning to count my blessings and be truly thankful for the people in my life who I treasure above all things.
